Roast Chicken and Parsley

INGREDIENTS:
1 3 to 4 pound chicken salt and pepper to taste 1/2 cup olive oil
1/4 cup lemon juice 1 teaspoon ground thyme 1 bunch parsley



1 Wash and dry the chicken. Salt and pepper it inside and out. Rub the bird well, inside and out, with a dressing made of the oil, lemon juice, and thyme. Stuff the bird losely with the fresh parsley, and bake, uncovered, in a 350 degree oven for about 1-1/4 hours.
