Grate the cheese. Mash eggs and add to cheese with parsley and pinch of pepper. Bind with egg whites. |

Cut gullash into 4-inch squares and keep covered with cloth, either damp or dry. Take each square separately, place on smooth surface, and arrange cheese mixture thinly in a cigarette shape, about 1/2 inch from both ends. Fold sides toward center and roll very tightly. |
