INGREDIENTS:
2-1/4 pounds colocasia 1 tablespoon butter 1/2 cup milk
salt    



1 Wash colocasia without peeling and roast in 425 F. oven for about 2 hours. The peel will harden and become crust-like. Chop off part of the head and scoop out the inside. While still warm, mash with butter, milk, and salt. Return to oven and cook for 5 minutes.
