Shin of Veal, Stewed (Moza matbukha)

INGREDIENTS:
2-1/4 pounds shin of veal 2 onions 1 pound potatoes
cooking oil salt and pepper  



1 Cut meat into bite-sized cubes. Slice the onions coarsely and saute in cooking oil. Add meat and brown all over. Add warm water to cover, season, and cook over very low flame for about 60 minutes.
2 Cut peeled potatoes to match-stick size. Fry in oil until very crisp. Remove onto absorbent paper.
3 When meat is ready, toss in the potatoes and cook for a few minutes to allow the potatoes to absorb the juice. Season.
