Mexican Creamed Spinach

INGREDIENTS:
4 Tbsp. salad oil 4 Tbsp. flour 16-oz can spinach
4 diced tomatoes 3 Tbsp. diced onion 1/4 tsp. pepper
1/2 tsp. salt 1/8 tsp. garlic powder



1 In a skillet, heat oil and brown flour. Saute onions until tender, then add tomatoes. Cook 1 minute. Add drained spinach and seasonings, mix well. Cover, let simmer over low heat for 15 minutes, stirring occasionally. Serve hot. Sprinkle with diced pimientos if desired.
