| 4 Tbsp. salad oil | 4 Tbsp. flour | 16-oz can spinach |
| 4 diced tomatoes | 3 Tbsp. diced onion | 1/4 tsp. pepper |
| 1/2 tsp. salt | 1/8 tsp. garlic powder | |
| 1 | In a skillet, heat oil and brown flour. Saute onions until tender, then add tomatoes. Cook 1 minute. Add drained spinach and seasonings, mix well. Cover, let simmer over low heat for 15 minutes, stirring occasionally. Serve hot. Sprinkle with diced pimientos if desired. |
