| INGREDIENTS: | ||
| 1-1/4 cups wheat bran cereal | 1 cup milk | 1/4 cup vegetable oil |
| 1 egg, beaten | 1-1/4 cups all-purpose flour | 1/2 cup sugar |
| 1 tablespoon baking powder | 1/2 teaspoon salt | 1/2 cup raisins |
| 1 (8-ounce) package cream cheese, softened | 1/4 cup sugar | 1 egg beaten |
| 1 | In a large bowl, combine cereal and milk. Let stand 2 minutes. In small bowl, combine oil and 1 egg; stir into cereal mixture. In medium bowl, combine flour, 1/2 cup sugar, baking powder and salt. Add to cereal mixture, stirring just until moistened. Fold in raisins. Spoon into greased and floured 2-1/2 inch muffin cups, filling each 2/3 full. |
| 2 | In small bowl, combine cream cheese, 1/4 cup sugar and 1 egg, mixing until well blended. Drop rounded measuring tablespoonfuls of cream cheese mixture onto batter. Bake at 375 degrees 25 minutes. Remove from pan. |
