| INGREDIENTS: | ||
| 2 cups mashed potatoes | 1/4 cup matzoh cake meal | 1/2 teaspoon salt |
| dash of pepper | 3 eggs, beaten | 1 cup chopped cooked brisket |
| 1/2 cup matzoh meal | vegetable oil or chicken fat for frying | |
| 1 | Mix together potatoes, matzoh cake meal, salt, pepper, and 2 of the eggs. Form into balls. |
| 2 | Using your thumb, form a hole in each of the balls. Fill holes with chopped meat and enclose potato ball entirely around meat. |
| 3 | Dip potato balls in remaining egg and then roll balls in matzoh meal. |
| 4 | Fry balls in vegetable oil or chicken fat. Turn only once to brown both sides. |
