INGREDIENTS:
1/2 pound black-eyed peas, soaked for 4 hours and drained 2 stalks celery 1 yellow onion, peeled and chopped
1 teaspoon crushed red pepepr flakes salt and pepper to taste 1/2 pound smoked ham, cubed



1 Place all the ingredients in a pot, and do not quite cover with water. Simmer, covered, for about 30 minutes, or until tender.
