Chopped Herring

INGREDIENTS:
2 whole herrings 2 slices challah bread or other egg or white bread 1/2 cup apple cider vinegar
1 large mild onion, peeled and cut into quarters 2 hard-boiled eggs dash of pepper
1 to 2 teaspoons mayonnasie crackers



1 Wash herrings under cold water. Remove head, fins, and tail. Split belly and remove entrails. It is not necessary to remove the bones. Rinse inside well. Soak in cold water for 3 to 4 hours, making sure herrings are completely covered with water.
2 Soak bread in vinegar. Set aside.
3 Place herring, onion, hard-boiled eggs, and apple in a food processor and finely grind. Remove bread from vinegar, squeeze dry, and add to herring mixture. Mix in thoroughly. Add pepper and mayonnaise, mixing together well.
4 Serve with crackers.
