INGREDIENTS:
1/2 cup sugar 1 tablespoon cornstarch 1 cup water
2 tablespoons plus 1-1/2 teaspoons butter or margarine 1/2 teaspoon grated lemon rind 1 tablespoon plus 1-1/2 teaspoons lemon juice
1/8 teaspoon salt



1 Combine sugar, cornstarch, and water in top of a double boiler; bring water to a boil. Reduce heat to low; cook until mixture thickens, stirring frequently. Remove from heat; add butter and remaining ingredients, stirring until butter melts.
