| INGREDIENTS: | ||
| 1/4 cup onion, chopped fine | 1/4 cup minced green bell pepper | 3 tablespoons minced celery |
| 1/2 cup melted butter | 1-1/4 pounds fresh lump crabmeat, well drained | 1 teaspoon seafood seasoning |
| 1/4 cup cream | 1 large egg, beaten | 2 tablespoons all-purpose flour |
| 1 tablespoon minced fresh jalapeno pepper (optional) | 1 teaspoon Tabasco sauce | 1/4 teaspoon onion powder |
| 1/8 teaspoon garlic powder | 1 cup dry bread crumbs | 1/2 cup vegetable shortening |
| 1 | Over medium heat, saute onion, bell pepper, and celery in 1/4 cup of the butter until tender. Add crabmeat and seafood seasoning. Mix well. Remove from heat and combine all remaining ingredients except bread crumbs, shortening, and remaining butter. Shape into hush puppy-like cylinders. Coat with bread crumbs and chill at least 1 hour. Cook in shortening and remaining butter over medium-high heat until golden on all sides, approximately 5 to 8 minutes. |
