Ginger Cake (Teisen Sinsir)

INGREDIENTS:
4 ozs. butter 1 lb. flour 2 ozs. sugar (brown)
1 lb. treacle 1 oz. candied peel 1 oz. ground ginger
2 eggs 1 teaspoonful bicarbonate of soda 1 teacupful of milk



1 Heat together the treacle, butter and sugar. Mince the peel and add the beaten eggs. Put dry ingredients in a bowl, add the beaten eggs gradually and then the treacle, ets., and milk as required. Pour into a shallow tin, well greased, and bake for 3/4 hour in a moderate oven.
