| INGREDIENTS: | ||
| 1/2 lb flour | 4 ozs sugar | 4 ozs butter |
| yolk of one egg and whites of two | 1/2 teaspoonful baking powder | 1 teaspoonful cinnamon |

| 1 | Mix the baking powder with the flour and rub in the butter. Add the sugar and cinnamon and the yolk of the egg to make a stiff paste. Roll out and place on a shallow tin or plate as for making a plate tart. Cook "blind" in a hot oven. Allow to cool and spread with jam. Beat the whites of egg until stiff, fold in a little sugar, spread on jam and return to a cool oven to set. |
