Cabbage Salad (Krautsalat)

INGREDIENTS:
1 medium head of red or white cabbage 3 tbls oil or 2 strips of bacon, chopped 1/2 cup vinegar
1/2 cup water salt and pepper caraway seeds



1 Shred cabbage as finely as possible. Soak for 10 minutes in boiling water. Drain. Prepare a marinade with oil and seasoning and let cabbage soak in this for an hour or more. If bacon is substituted for oil, prepare marinade from vinegar, water and seasoning. Fry bacon lightly and add bacon and fat, while still hot, just before serving.
