Chicken Paprika (Paprika Huhn)

INGREDIENTS:
1 broiler-fryer salt and pepper 3-4 tbls butter
1 medium onion, chopped 1 tbls paprika 2-3 tbls flour
1/2 cup chicken or beef stock 1/2 cup cream



1 Dress the chicken, divide in quarters and rub with salt and pepper. Brown on all sides in hot butter with onion. Remove chicken, sprinkle paprika in fat, and heat briefly. Add flour and stock. Put back chicken and gently steam it in the sauce, in a well-covered pan, for about 20 minutes. Pour in cream, heat. Add salt and paprika to taste.
