| INGREDIENTS: | ||
| 10 large carrots | 2 small cucumbers | 3-1/2 oz raisins |
| 1 tablespoon lemon juice | 1/2 teaspoon ground ginger | 1 teaspoon ground cinnamon |
| 1 tablespoon honey | 1/3-1/2 cup olive oil | ground pepper |
| 1/2 cup flaked almonds | ||
| 1 | Peel and coarsely grate carrots. Place carrots and cucumber in a bowl, add raisins and mix through. |
| 2 | Combine lemon juice, ginger, cinnamon, honey, olive oil and pepper in a small bowl or screwtop jar. Whisk or shake well to combine. |
| 3 | Place flaked almonds in a small pan, stir over low heat until lightly golden. |
| 4 | Pour dressing over salad, garnish with almonds and serve. |
