Grated Carrot Salad

INGREDIENTS:
10 large carrots 2 small cucumbers 3-1/2 oz raisins
1 tablespoon lemon juice 1/2 teaspoon ground ginger 1 teaspoon ground cinnamon
1 tablespoon honey 1/3-1/2 cup olive oil ground pepper
1/2 cup flaked almonds



1 Peel and coarsely grate carrots. Place carrots and cucumber in a bowl, add raisins and mix through.
2 Combine lemon juice, ginger, cinnamon, honey, olive oil and pepper in a small bowl or screwtop jar. Whisk or shake well to combine.
3 Place flaked almonds in a small pan, stir over low heat until lightly golden.
4 Pour dressing over salad, garnish with almonds and serve.
