| INGREDIENTS: | ||
| 1-1/2 pounds sweet potatoes | 1/3 cup butter, melted | 1/2 cup brown sugar |
| 1 cinnamon stick | 1 tablespoon lemon juice | 1/2 cup orange juice |
| 2 teaspoons grated lemon peel | ||
| 1 | Peel sweet potatoes and cut into thick rounds. Arrange in a 1-1/2 quart casserole and pour over melted butter. |
| 2 | Add sugar, lemon juice, orange juice and cinnamon stick. |
| 3 | Cover with a lid or aluminum foil. Bake at 350 F. for 30 minutes or until tender. Uncover and discard cinnamon stick; stir. Sprinkle with lemon peel. Cook, uncovered, 15-30 minutes until top is crisp. |
