| INGREDIENTS: | ||
| 1-1/2 lb young green beans | 1/4 cup vegetable oil | 2 cloves garlic, crushed |
| 1 medium, red onion, finely chopped | 6 red, ripe tomatoes, peeled and chopped | 1 small red chili, finely chopped |
| 2/3 cup hot water | ||
| 1 | Wash beans, drain and dry on absorbent paper. Remove ends. |
| 2 | Heat oil in large frying pan. Add garlic and onion and cook until golden and glossy in appearance. Add tomatoes and chili and cook for 2 minutes more. Add whole green beans and stir-fry over high heat for 3 minutes. |
| 3 | Add hot water and simmer 10 minutes, or until beans are just tender. Do not overcook. Serve hot. |
