Spicy Green Beans

INGREDIENTS:
1-1/2 lb young green beans 1/4 cup vegetable oil 2 cloves garlic, crushed
1 medium, red onion, finely chopped 6 red, ripe tomatoes, peeled and chopped 1 small red chili, finely chopped
2/3 cup hot water



1 Wash beans, drain and dry on absorbent paper. Remove ends.
2 Heat oil in large frying pan. Add garlic and onion and cook until golden and glossy in appearance. Add tomatoes and chili and cook for 2 minutes more. Add whole green beans and stir-fry over high heat for 3 minutes.
3 Add hot water and simmer 10 minutes, or until beans are just tender. Do not overcook. Serve hot.
