Peel shrimp, leaving tails intact. Make a shallow cut lengthwise down the back of each shrimp. Rinse out dark vein. On a cutting board, lay 1 shrimp on its side with tail curling left. Place second shrimp on its side with tail curling right. Fit shrimp together with backs meeting. In a small bowl, make a thick paste with cornstarch and a few drops of water. Put a dab of paste between shrimp. Pin whrimp together with 2 wooden picks. In a medium-size saucepan, bring water to boil. Add shrimp. Reduce heat to low; poach shrimp pinwheels 2 to 3 minutes. Drain; cool slightly. Remove wooden picks. |
