Italian-Style Oven Dinner

INGREDIENTS:
4 baking potatoes, cut into wedges 1/2 teaspoon salt 2 garlic cloves, minced
1 red bell pepper, sliced 1 green bell pepper, sliced 1 can (28 ounces) Italian peeled tomatoes, drained and cut up
1 pound Italian hot or sweet sausage cut into 2-inch segments 1 chicken (3 pounds), cut up 1 tablespoon olive oil
1/2 teaspoon coarsely cracked black pepper



1 Preheat oven to 350 F. Arrange potatoes in large roasting pan. Sprinkle with 1/4 teaspoon of the salt and the garlic. Layer peppers, tomatoes, and sausage over potatoes. Arrange chicken on top.
2 Brush chicken with olive oil. Sprinkle with remaining salt and pepper. Bake uncovered 1 hour and 15 minutes, until tender.
