| 1 red bell pepper, sliced | 1 green bell pepper, sliced | 1 can (28 ounces) Italian peeled tomatoes, drained and cut up |
| 1 pound Italian hot or sweet sausage cut into 2-inch segments | 1 chicken (3 pounds), cut up | 1 tablespoon olive oil |

| 1 | Preheat oven to 350 F. Arrange potatoes in large roasting pan. Sprinkle with 1/4 teaspoon of the salt and the garlic. Layer peppers, tomatoes, and sausage over potatoes. Arrange chicken on top. |
