| INGREDIENTS: | ||
| 2 large celery knobs | 3 tbls vinegar | 3 tables olive oil |
| 1 cup beef stock | 1 small onion, chopped | salt and pepper |
| 1 | Scrape celery and cook in salted water until tender. Chop up. Prepare marinade from the other ingredients, mix well with celery and let stand for several hours. Instead of olive oil, one or two strips of bacon, chopped and lightly browned, with the bacon fat may be used. This should be added to the salad at the last minute. |
