INGREDIENTS:
8 lamb kidneys, cut in pieces 1/2 lb fresh mushrooms, sliced butter
2 tbls sherry



1 Saute kidneys and mushrooms in butter until browned. Make a cream sauce by sprinkling 1-1/2 tbl flour over them in pan. Slowly blend in rich milk or cream to make a cream sauce. Remove from stove and add 2 tbl sherry.
