| INGREDIENTS: | ||
| leftover mashed potatoes (white or sweet), at least 1-1/2 cups | 1/4 cup milk | 1/2 cup grated cheese |
| salt and pepper to taste | nutmeg, pinch | cayenne, few grains |
| 1 beaten egg with 1 tbsp water | 1 cup bread crumbs | deep fat |
| 1 | Heat mashed potatoes, milk to moisten, and grated cheese. Add salt, pepper, nutmeg, and cayenne. Mix well. Cool. Roll in walnut-sized balls. Dip in egg, then roll in bread crumbs. Fry in hot deep fat 375 F. (a cube of bread will brown in about 60 seconds) until golden brown. Drain on absorbent paper before serving. |
