Clean the spinach well and tear off the large stalks. Put in a large pot, cover, and place on low heat (the water left on the leaves will be sufficient for steaming the spinach). As soon as the leaves begin to wilt, give the spinach a good stir, cover again, and leave for another minute or so to cook. |

Drain the spinach and squeeze out all the excess liquid. Chop it roughly. |

In a frying pan, heat the butter or oil on medium low. Add the chopped onion and fry till almost golden. Add the chopped spinach, mix well, and cook for a minute or two. Season with salt, freshly ground black pepper, and nutmeg. Pour on the cream, mix well, and cook for another minute or two. |
