Pork Roast (Schweineschlegel)

INGREDIENTS:
1 6-lb pork leg (fresh ham) salt and pepper 1 cup water (more if it evaporates)
1 onion 3/4 cup butter 2 tbls flour



1 Score skin of pork leg lightly in a diamond pattern. Rub with salt and pepper. Bring water to a boil, place in it pork leg and onion. Cover and bake until done (about 4 hours in a 325 F. oven). Meat must be gray, not pink, throughout. Remove from water. Melt butter and pour over pork. Then, over high heat, crisp the outer skin in the butter. Remove, pour on cold water. Replace in oven to reheat briefly. Prepare gravy from flour and drippings. Serve with salted potatoes and red cabbage or brussels sprouts and glazed chestnuts.
