Beef in Oyster Sauce with Mushrooms

INGREDIENTS:
1 pound beef sirloin steak 1 tablespoon fish sauce 1 teaspoon sugar
2 tablespoons cooking oil 1 medium onion, sliced 2 teaspoons finely shredded gingerroot
1/2 of a 15-ounce can straw mushrooms, drained 1/4 cup beef broth or water 1 teaspoon cornstarch
2 tablespoons oyster sauce 2 tablespoons chopped green onion



1 Trim beef of fat and thinly slice into narrow strips. Place in a bowl; add fish sauce and sugar. Marinate for 1 hour in the refrigerator, turning meat occasionally.
2 Heat a wok or large skillet over high heat. Add oil. Stir-fry onion and gingerroot in hot oil till onion is tender. Push to one side and add beef. Stir-fry beef till brown. Add mushrooms and heat through.
3 Stir together beef broth or water and cornstarch. Add to beef mixture. Cook and stir till thickened and bubbly. Add oyster sauce and half of the green onions. Cook and stir till heated through.
4 Serve beef mixture over rice and garnish with remaining green onions.
