Pineapple Soy Chicken

INGREDIENTS:
1/2 to 3/4 cup flour 1/2 teaspoon salt 2 1-1/2 pound chickens, cut into halves
vegetable oil for frying 1 cup grated fresh pineapple 1 tomato, sliced
1 green pepper, sliced 1 tablespoon soy sauce 3/4 cup sliced almonds
4 sprigs fresh parsley



1 Mix together flour and salt. Dredge chicken halves in flour and salt mixture.
2 Cook chicken halves in oil until done.
3 Remove from pan and set aside on a serving platter or individual dishes.
4 Combine pineapple, tomato, and green pepper and add to hot oil in pan. Add soy sauce and carefully stir together. Cook until heated and then pour over chicken.
5 Sprinkle chicken with almonds and garnish with parsley sprigs.
