| INGREDIENTS: | ||
| 1/2 to 3/4 cup flour | 1/2 teaspoon salt | 2 1-1/2 pound chickens, cut into halves |
| vegetable oil for frying | 1 cup grated fresh pineapple | 1 tomato, sliced |
| 1 green pepper, sliced | 1 tablespoon soy sauce | 3/4 cup sliced almonds |
| 4 sprigs fresh parsley | ||
| 1 | Mix together flour and salt. Dredge chicken halves in flour and salt mixture. |
| 2 | Cook chicken halves in oil until done. |
| 3 | Remove from pan and set aside on a serving platter or individual dishes. |
| 4 | Combine pineapple, tomato, and green pepper and add to hot oil in pan. Add soy sauce and carefully stir together. Cook until heated and then pour over chicken. |
| 5 | Sprinkle chicken with almonds and garnish with parsley sprigs. |
