Moroccan-Style Fresh Fruit Salad

INGREDIENTS:
2 apples 2 pears 2/3 cup orange juice
1 tablespoon lemon juice 2 bananas 2 tablespoons orange-flower water
confectioner's sugar 8 oz strawberries, bulled and halved lengthways fresh mint leaves
rind of 1 orange



1 Core apples and pears and cut into thin slices.
2 Place in serving bowl and add orange and lemon juices to prevent the apples and pears discoloring.
3 Peel and cut bananas thinly. Add to fruit in bowl and toss gently. Add orange flower water and sprinkle with confectioner's sugar to taste.
4 Add strawberry halves to fruit salad. Sprinkle with fresh mint leaves.
5 Grate orange rind and cook in water or light sugar syrup for 5 minutes, drain. Arrange over fruit salad and serve.
