| INGREDIENTS: | ||
| 1 cup all-purpose flour | 1 cup yellow cornmeal | 1/4 cup sugar |
| 1 tablespoon baking powder | 1-1/4 teaspoons ground cinnamon | 1/2 teaspoon salt |
| 2 eggs | 1/2 cup cold strong coffee | 1/4 cup butter or margarine, melted |
| 1/2 teaspoon Tabasco pepper sauce | 1 cup mashed yams or sweet potatoes | |
| 1 | Preheat oven to 425 F. Grease 12 (3-inch) muffin cups. Prepare batter as directed. Spoon into muffin cups. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan. Serve warm or at room temperature. |
