| INGREDIENTS: | ||
| 1 pint firmly set junket | 2 ozs margarine | yolks of 2 eggs |
| 1/2 oz sugar | 1/2 oz currants | 1/2 oz cake crumbs |
| rind of lemon | 1 teaspoonful brandy | pinch of salt |
| 1 | Cut junket and drain through muslin to remove whey, cream butter and sugar, add eggs, crumbs, flavouring and curds. Fill into patty tins lined with short pastry. Bake in moderater oven for 15-20 minutes. |
