Fish Baked with Chutney

INGREDIENTS:
1-1/4 lb boneless fish 1/4 teaspoon black pepper 1/2 teaspoon sweet paprika
1 cup vegetable oil 1 tablespoon lemon juice 1 medium onion, finely chopped
1/3 teaspoon crushed garlic 1/2 teaspoon grated ginger 2 tablespoons chopped cilantro or mint leaves
2 tablespoons butter 4 tablespoons sweet mango chutney, crushed



1 Seasnon fish with pepper and paprika and cook in the oil for 40 seconds on each side. Sprinkle with lemon juice. Place half the fillets in a buttered ovenproof dish.
2 Brown the onion, garlic and ginger in the butter. Add cilantro, mix well. Spread over the fish and arrange the other fillets on top. Drizzle on any butter left in the pan.
3 Spread the chutney evenly over the fish and bake uncovered at 350 F for about 12 minutes.
