Zucchini, Stew with Tomatoes (Kosa matbukha bi-l-tamatim)

INGREDIENTS:
2-1/4 pounds large-size zucchini 1 pound beef 2-1/4 pounds ripe tomatoes
2 onions cooking oil salt and pepper
cornflour (cornstarch) (optional)



1 Prepare zucchini. Cut meat into small cubes. Peel tomatoes and chop. Slice onions very thin, keeping all ingredients separate.
2 Fry onions to a rich golden color, add tomatoes, and cook for 10 minutes. Add meat and seasoning and cook for a further 20 minutes. Toss in the zucchini and cook until meat is tender. Thicken with cornflour (cornstarch) if necessary.
