INGREDIENTS:
9 eggs, beaten 1-1/2 teaspoons sugar 1-1/2 teaspoons salt
1/8 teaspoon ground red pepper 3 (8-ounce) packages Monterey Jack cheese, cubed 18 ounces cream cheese, cubed
1 (12-ounce) carton small-curd cottage cheese 1 tablespoon butter or margarine, cut into small pieces 3/4 cup all-purpose flour
1-1/2 teaspoons baking powder 1 (4-ounce) can chopped green chilies, drained (optional)



1 Combine eggs, sugar, salt, and pepper in a medium bowl; stir well.
2 Combine cheese in a large bowl, stirring well. Stir butter into cheese mixture.
3 Combine flour and baking powder in a small bowl; stir well. Add flour and egg mixtures to cheese mixture, stirring gently. Stir in green chiles, if desired.
4 Pour egg mixture into a greased 13x9x2-inch baking dish. Bake at 350 F. for 45 to 50 minutes or until set. Let stand 5 to 10 minutes before serving.
