| 9 eggs, beaten | 1-1/2 teaspoons sugar | 1-1/2 teaspoons salt |
| 1/8 teaspoon ground red pepper | 3 (8-ounce) packages Monterey Jack cheese, cubed | 18 ounces cream cheese, cubed |
| 1 (12-ounce) carton small-curd cottage cheese | 1 tablespoon butter or margarine, cut into small pieces | 3/4 cup all-purpose flour |
| 1-1/2 teaspoons baking powder | 1 (4-ounce) can chopped green chilies, drained (optional) | |
| 1 | Combine eggs, sugar, salt, and pepper in a medium bowl; stir well. |
| 2 | Combine cheese in a large bowl, stirring well. Stir butter into cheese mixture. |
| 3 | Combine flour and baking powder in a small bowl; stir well. Add flour and egg mixtures to cheese mixture, stirring gently. Stir in green chiles, if desired. |
