Chorizo, Cheese, and Chilies Pizza

INGREDIENTS:
basic pizza dough 1 pound good-quality chorizo or other spicy pork sausages about 2/3 cup vegetable oil
1/2 cup finely chopped yellow onion 1 teaspoon minced or pressed garlic 3 tablespoons good-quality chili powder, or to taste, if not using spicy chorizo
1 teaspoon ground cumin, or to taste cornmeal, if using pizza peel 2 cups (about 6 ounces) shredded Monterey Jack cheese
2 cups (about 6 ounces) shredded white Cheddar cheese 2 cups well-drained cooked dried or canned chili or pinto beans 1 cup chopped fresh or canned mild or hot chili peppers
1 cup finely chopped red sweet onion crushed dried red chili pepper 1/4 cup (about 1 ounce) freshly grated Parmesan cheese
1/3 cup chopped fresh cilantro (coriander) homemade or commercial red or green salsa



1 Prepare the dough and preheat the oven as directed in the basic recipe.
2 Remove the chorizo from casings, crumble, and place in a skillet over medium heat and cook until done. Remove from the skillet and drain on paper towels; discard the grease in the skillet. Pour 2 tablespoons vegetable oil into the skillet over medium heat, add the yellow onion, and cook until soft, about 5 minutes. Add the drained chorizo, the garlic, chili powder, if using, and cumin and cook to combine flavors, about 2 minutes. Remove from the heat and reserve.
3 Shape the pizza dough as directed in the basic recipe. Brush dough all over with vegetable oil, then top with a layer of each of the cheeses with the reserved chorizo mixture, then arrange the beans, chopped chili peppers, and red onion over the top. Season to taste with crushed red pepper. Drizzle evenly with vegetable oil.
4 Transfer the pie to the preheated baking surface and bake as directed in the basic recipe. Remove from the oven to a cutting tray or board and lightly brush the crust with vegetable oil. Sprinkle with the Parmesan cheese, cilantro, and salsa. Slice and serve immediately.
