Baked Deviled Eggs

INGREDIENTS:
DEVIL EGGS: 6 hard-boiled eggs 2 t prepared mustard 3 T sour cream
1/4 t salt SUACE: 2 T butter 1/3 C onion, chopped
1 can cream mushroom soup 1/2 C Cheddar cheese, shredded 1/2 C green pepper, chopped
1/2 C pimiento, chopped 1 C sour cream



1 DEVIL EGGS: Cut eggs in half and remove yolks. Mix yolks, sour cream, mustard, and salt together. Put back into whites.
2 SAUCE: In large skillet melt butter; saute green pepper, and onion till tender. Remove from heat. Stir in pimiento, soup, and sour cream. Pour half the sauce in the bottom of the casserole. Single layer eggs with cut side up and pour remaining sauce over them. Sprinkle with Cheddar cheese. Bake 20 minutes at 350 F. Serve on toasted English muffins. Makes a delicious brunch along with fresh melon.
