Rinse and dry oysters. In a shallow dish mix the Cajun spices, paprika and basil thoroughly. Set aside two teaspoons of the spice mix. Add the flour to remainder and stir thoroughly. |

Thread three oysters onto eight oiled skewers (choose thin bamboo or metal) and coat with spiced flour. |

Heat the oil and butter in a large skillet. Cook the oysters until they are golden, turning frequently. Drain on paper towels. Sprinkle with the reserved Cajun spices and serve with wedges of lemon and a dish of mayonnaise. |
