New Orleans Oysters

INGREDIENTS:
24 large oysters, sheels removed 2 teaspoons Cajun spices 1/2 teaspoon sweet paprika
1/4 teaspoon dried basil 1/2 cup all-purpose flour 1/2 cup vegetable oil
3 tablespoons unsalted butter



1 Rinse and dry oysters. In a shallow dish mix the Cajun spices, paprika and basil thoroughly. Set aside two teaspoons of the spice mix. Add the flour to remainder and stir thoroughly.
2 Thread three oysters onto eight oiled skewers (choose thin bamboo or metal) and coat with spiced flour.
3 Heat the oil and butter in a large skillet. Cook the oysters until they are golden, turning frequently. Drain on paper towels. Sprinkle with the reserved Cajun spices and serve with wedges of lemon and a dish of mayonnaise.
