INGREDIENTS:
3 tablespoons corn oil 2-1/2 cups short-grain rice 4 to 4-1/2 cups boiling water



1 Heat the oil in a medium saucepan with a tight-fitting lid. Add the rice and saute quickly over medium-high heat for 2 minutes. Add the water and cook until almost all of the liquid has evaporated.
2 Stir well, reduce the heat to very low, and cover the rice. Cook for 20 more minutes, stirring after 10 minutes.
