INGREDIENTS:
Nuoc Cham 2 tablespoons roasted peanuts, ground 8 garlic cloves, minced
2 teaspoons nuoc mam (Vietnamese fish sauce) 1/4 teaspoon salt 1/2 teaspoon sugar
2 tablespoons peanut oil freshly ground black pepper 8 ounces rump roast of beef
4 ounces bacon, cut into 24 strips, each about 1-1/2 inches long 12 bamboo skewers, soaked in water for 30 minutes



1 Prepare the Nuoc Cham and roasted peanuts. Set aside.
2 Combine the garlic, fish sauce, salt, sugar, oil, black pepper to taste and the ground nuts in a bowl. Set the marinade aside.
3 Thinly slice the beef crosswise, against the grain, into 12 strips that are 1-1/2 inches long and 4 to 5 inches wide. Mix the beef strips with the marinade; let stand for 30 minutes.
4 Sandwich each piece of meat between 2 pieces of bacon and thread on the skewers.
5 Grill the skewers over hot coals or under a broiler for 4 to 5 minutes, turning once. Serve immediately with Nuoc Cham.
