| 4 pork chops | salt and pepper | 1 egg, beaten |
| bread crumbs | 1 tbls. butter | |
| 1 | Rub chops generously on both sides with salt and pepper. Dip in egg and in bread crumbs. Fry slowly in butter until crisp and thoroughly done. |
| 2 | Season chops well and fry slowly in butter until crips. |
| 3 | Broil chops slowly on both sides 5 inches from heat. Season well when done. Serve with potato salad, cucumber salad, or cooked carrots and mixed vegetables. |
