Roasted Herbed Garlic

INGREDIENTS:
3 bulbs garlic 2 tablespoons olive or vegetable oil 1 teaspoon chopped fresh thyme leaves
1/4 teaspoon salt 1/4 teaspoon coarsely ground pepper



1 Prepare grill; heat until coals are ash white.
2 Remove papery skin from outside of each bulb without separating cloves. Cut off top 1/2 inch of each garlic bulb.
3 Place garlic bulbs in rectangle of heavy-duty aluminum foil. Drizzle with oil; sprinkle with thyme, salt and pepper. Bring edges of foil up to center; tightly seal top and sides.
4 Place foil packet on grill. Grill until garlic is fork tender (30 to 35 minutes).
5 Carefully separate cloves; squeeze out pulp. Spread on bread or use as coating for meats and vegetables.
