| INGREDIENTS: | ||
| 1/2 cup sugar | 2 tablespoons cornstarch | 2-1/3 cups fresh blueberries |
| 1-1/2 cups water | 2 tablespoons lemon juice | 1 teaspoon grated lemon rind |
| 4 orange or lemon rind curls for garnish | soft-whipped cream, if desired | |
| 1 | Mix sugar and cornstarch in medium saucepan; stir in 2 cups of the blueberries, the water, lemon juice and grated lemon rind. |
| 2 | Cook and stir over medium-low heat until mixture thickens and bubbles for 3 minutes. Spoon into dessert cups; refrigerate, covered, until cold. |
| 3 | Before serving, top with remaining 1/3 cup blueberries. Garnish with orange rind curls; serve with cream. |
