Blueberry Flummery

INGREDIENTS:
1/2 cup sugar 2 tablespoons cornstarch 2-1/3 cups fresh blueberries
1-1/2 cups water 2 tablespoons lemon juice 1 teaspoon grated lemon rind
4 orange or lemon rind curls for garnish soft-whipped cream, if desired



1 Mix sugar and cornstarch in medium saucepan; stir in 2 cups of the blueberries, the water, lemon juice and grated lemon rind.
2 Cook and stir over medium-low heat until mixture thickens and bubbles for 3 minutes. Spoon into dessert cups; refrigerate, covered, until cold.
3 Before serving, top with remaining 1/3 cup blueberries. Garnish with orange rind curls; serve with cream.
