Potato Pancakes

INGREDIENTS:
2 large eggs 2 tablespoons all-purpose flour 2 tablespoons milk
2 tablespoons butter or margarine, melted 1/2 teaspoon salt pinch pepper
3 medium potatoes, pared, shredded 1/2 small onion, grated applesauce or sour cream
parsley sprigs for garnish



1 Whisk eggs in large bowl; whisk in flour, milk, butter, salt and pepper until smooth. Add potatoes and onion; stir just until potato shreds are coated.
2 For each pancake, place 1/4 cup batter onto hot greased griddle; spread batter to form 4-inch pancake. Cook over medium heat, turning once, until brown on both sides. Serve immediately with applesauce or sour cream; garnish with parsley.
