| 2 large eggs | 2 tablespoons all-purpose flour | 2 tablespoons milk |
| 2 tablespoons butter or margarine, melted | 1/2 teaspoon salt | pinch pepper |
| 3 medium potatoes, pared, shredded | 1/2 small onion, grated | applesauce or sour cream |

| 1 | Whisk eggs in large bowl; whisk in flour, milk, butter, salt and pepper until smooth. Add potatoes and onion; stir just until potato shreds are coated. |
| 2 | For each pancake, place 1/4 cup batter onto hot greased griddle; spread batter to form 4-inch pancake. Cook over medium heat, turning once, until brown on both sides. Serve immediately with applesauce or sour cream; garnish with parsley. |
