Almond Creams (Amanteigados)

INGREDIENTS:
2-1/2 cups sugar 1 cup water 3 cups ground blanched almonds
12 egg yolks 6 egg whites, unbeaten 6 egg whites, stiffy beaten
crystallized sugar



1 Make a syrup of the sugar and water and cool. Mix in the almonds, egg yolks, unbeaten egg whites, and fold in the 6 beaten egg whites. Place in a square buttered baking dish and bake for 20 minutes at 300 degrees. Cool and cut inot small squares. Roll each in crystallized sugar and place in small decorative paper cups.
