Brazilian Chicken Soup (Canja a Brasileira)

INGREDIENTS:
stewing chicken, 5 pounds 2 quarts water 2 teaspoons salt
1/2 cup rice 1/2 small onion, chopped 1 carrot, finely diced
1 small clove garlic, crushed 1/2 teaspoon pepper 1 small tomato, peeled, seeded, and chopped
1 teaspoon chopped parsley 1 teaspoon chives or chopped green onion 1 sprig mint, chopped



1 Disjoint the chicken and cook with water and salt for 2 hours, or until tender. Add rice, onion, carrot, garlic, and pepper, and cook until rice is well cooked and chicken is tender. Add finely cut-up tomato when almost done, for color, Put in parsley, chives or chopped green onion, and mint, and serve. Pieces of the chicken may be served in the soup plate or separately.
