South Indian Shredded Cabbage (Bundghobi Poriyal)

INGREDIENTS:
1 green cabbage, about 1-1/2 pounds in weight, shredded in a food processor 4 tablespoons coconut oil, mustard oil, or peanut oil 1 teaspoon mustard seeds
1 large Spanish onion, peeled and finely chopped 1 tablespoon chopped fresh cilantro leaves flesh of 1 coconut, shredded, and its water
salt to taste



1 Blanch the shredded cabbage in boiling water for 1-2 minutes, then drain.
2 Heat the oil and fry the mustard seeds for 2 minutes, the onion for 3 minutes, then the fresh cilantro for 1 minute.
3 Place the cabbage in the pan and stir-fry until hot. Use the coconut water to keep it moist. Add the shredded coconut. Salt to taste and serve. Garnish, if you like, with some steamed white lentils and fresh cilantro.
