| 3-4 Rock Cornish Game Hens | 1 tsp salt | 1/2 tsp ginger |
| 1 clove garlic, crushed | 2 Tbsp lemon juice | 4 Tbsp vegetable oil |
| 1/2 C frozen orange juice concentrate | 1/2 C giblet stock | 2 tsp soy sauce |
| 1 | Wash thawed Rock Cornish Hens. Blend remaining ingredients; let stand in this marinade at least 1 hour before placing on spit. Pull neck skin back, secrue wings against body; tie tail and legs together. Follow manufacturers directions for securing hens on spit. Start motor. Gill 45-60 minutes, brushing occasionally with reserved marinade until golden brown and done. |
