INGREDIENTS:
1 lb dried peas 1 onion 1 leak
1 small celery knob 1 tbls butter 1 lb pig's ear and snout
thyme or marjoram salt and pepper 2 potatoes, raw, chopped fine



1 Soak peas overnight. Dice other vegetables and saute lightly in butter in a fairly large pan. Add peas and fill up with water. Cook one hour, add meat, cubed, and seasoning and continue cooking until tender, 2 to 3 hours in all. To bind, add raw potatoes 20 minutes before serving.
