| 1 lb dried peas | 1 onion | 1 leak |
| 1 small celery knob | 1 tbls butter | 1 lb pig's ear and snout |
| thyme or marjoram | salt and pepper | 2 potatoes, raw, chopped fine |
| 1 | Soak peas overnight. Dice other vegetables and saute lightly in butter in a fairly large pan. Add peas and fill up with water. Cook one hour, add meat, cubed, and seasoning and continue cooking until tender, 2 to 3 hours in all. To bind, add raw potatoes 20 minutes before serving. |
