| 2 lbs gooseberries (green) | abount six stalks of fresh mint | sugar |
| 1 | Place gooseberries in a preserving pan, just cover with cold water and cook until soft. Strain carefully and to each pint of liquid add 1 lb of sugar. Replace in the preserving pan, together with the mint tied up in a buddle. Heat gently till the sugar is melted, then boil until it "jells". Remove the mint, pour into glass jars and seal. |
