Twice Baked Potatoes

INGREDIENTS:
4 baking size potatoes salt and pepper to taste 2 T onion, finely chopped
cheddar cheese, shredded or American cheese, sliced 1 T butter 1/2 C milk
2 strips bacon



1 Microwave bacon 2 minutes on high or until crisp; set aside. Prick potatoes and bake about 12 minutes on high or until done. Slice each in half and carefully scoop out of shell. Mash potatoes, adding butter, milk, and seasonings until smooth. Stir in bacon pieces and chopped onion. Put back into shell and top each with shredded cheddar or half slice American cheese. Can be refrigerated until ready to serve. Return to micro when ready and allow 5 minutes at 70 (or roast) to heat through and melt cheese.
