INGREDIENTS:
5 lbs rhubarb 4 lbs sugar juice of 2 lemons
1 lb raisins 1 gallon



1 Cut up the rhubarb, unpeeled, into small pieces. Place in a pan and add the water. Let it stand for a week to soften. Strain and add the sugar, juice and raisins. If a very clear wine is required add 1/4 oz isinglass dissolved in a little warm water. Stir every day and when it ceases to "work" bottle it, but do not cork tightly till the "hissing" has stopped.
