| 5 lbs rhubarb | 4 lbs sugar | juice of 2 lemons |
| 1 lb raisins | 1 gallon | |
| 1 | Cut up the rhubarb, unpeeled, into small pieces. Place in a pan and add the water. Let it stand for a week to soften. Strain and add the sugar, juice and raisins. If a very clear wine is required add 1/4 oz isinglass dissolved in a little warm water. Stir every day and when it ceases to "work" bottle it, but do not cork tightly till the "hissing" has stopped. |
